How to cook Crispy Mixed Veg Pakora:
MIXED PAKORA - Monsoons are incomplete without this. Once you have the basics right, cripsy snacks wont be a challenge anymore!
Ingredients:
For Batter-
- Gram flour-1 ¼ cup
- Salt to taste
- Carom seeds-¼ tsp
- Baking soda-1 tsp
- Water-½ cup
- Curd beaten-1 tbsp
- Rice flour-1 tbsp
- tsp Oil-1 ½
For Stuffing Bhavnagri Chili
- Paneer grated-100 gms
- Coriander leaves,finely chopped-100 gms
- Salt to taste,
- Green chutney-2 tsp
- Nylon sev-2 tbsp
- roasted Coriander seeds, crushed-½ tsp
- Bhavnagri chillies-6-7
For Pakora
- Onion rings-2 medium size
- Paneer, cut into medium size cube-100 gms
- 1 large Potato medium slice
- 1 Tomato slice
For Bhajiya
- 1 medium size Onion slice,
- 1 medium size Potato, thinly julienned,
- Spinach shredded-¼ cup
- roasted Coriander seeds, crushed-½ tsp
- Fennel seeds-¼ tsp
- Cumin seeds-¼ tsp
- Carom seeds-¼ tsp
- Salt to taste
- 2 Green chillies (chopped & less spicy)
- Turmeric powder-¼ tsp
- Ginger Garlic paste-1 tsp
- Gram flour-⅓ cup
Other Ingredients- Oil for frying
- Nylon sev (for coating)
- 2-3 Green chillies (slit & less spicy)
How to make (Process):
For Batter
- In a bowl, add gram flour, salt as per taste, carom seeds, baking soda, water as required and mix well.
- Now add whipped curd to it and blend it, add water as required and make a smooth paste.
- Add rice flour, oil and mix everything well and keep aside for 9-10 minutes.
For Stuffing Bhavnagri Chili
- Slit the chillies and keep it aside for further use.
- In a bowl, add paneer, coriander leaves, salt to taste, green chutney, nylon sev and mix it well.
- Now, add roasted coriander seeds and give it a good mix.
- Fill the prepared mixture in Bhavnagari chilli.
- Keep it aside for further use.
For Pakora
- Cut the onions, potatoes and tomatoes into medium size slices.
- Now cut the paneer into medium sized solid shapes.
- Cut the Bhavnagri green chillies in half and keep them aside for additional use.
For Bhajiya
- In a bowl, add all the chopped vegetables, cooked coriander, fennel, cumin, carom seeds, salt to taste, green bean stew and mix well. Grind the vegetables properly and remove excess water.
- Now, add turmeric powder, ginger garlic paste and mix, then add gram flour and mix everything properly.
- Keep it aside for further use.
For Frying
- Dip the potatoes,onion,paneer,and tomato slice into the batter and fry on moderate heat.
- Once the vegetables are half done,remove and keep it aside.Now, dip the stuffed Bhavnagari green chillies in the heater and wrap them with nylon sev and put them in hot oil, when the green chillies are cooked well, take them out on a spongy paper and keep them aside for additional use.
- Now add the bhajiya mixture little by little and deep fry until cooked from all sides.
- Remove and keep it aside for further use.
- Add green chili into batter and place into hot oil and fry until nice crisp surface appears on it.
- Now,deep fry the half done pakoras on moderate heat until crispy.
- Transfer it on a platter and serve hot with green chutney or tomato ketchup.
